Mild Child Salsa Pasta Salad

Ingredients:

  • 8 oz rotini pasta
  • 1 cup Larry's Mild Child Salsa
  • 1 cup cherry tomatoes, halved
  • 1 cup corn kernels (fresh or frozen)
  • 1 cup black beans, rinsed and drained
  • 1/2 cup diced red onion
  • 1/4 cup chopped fresh cilantro
  • 1 avocado, diced
  • Juice of 1 lime
  • Salt and pepper to taste

Instructions:

  1. Cook the rotini pasta according to package instructions. Drain and rinse under cold water.
  2. In a large bowl, combine the cooked pasta, Larry's Mild Child Salsa, cherry tomatoes, corn, black beans, red onion, and cilantro.
  3. Gently fold in the diced avocado.
  4. Add the lime juice, salt, and pepper, and toss to combine.
